Basil Bean Salad

Spicy and delicious, the flavor of this salad is reminiscent of the popular Italian pasta with pesto sauce.


Makes 4 servings
1     10-ounce package frozen green beans
½    cup very thinly sliced onions
2     tablespoons red wine vinegar
1     tablespoon plus 1 teaspoon olive oil
3     tablespoons water
    teaspoon garlic powder
1     teaspoon dried basil
1     tablespoon grated Parmesan cheese
    teaspoon pepper
       Salt to taste

(I tripled this recipe to bring to a party, so the proportions look larger than usual)

Gather ingredients. 


Cook beans according to package directions, cooking until just tender-crisp. 


Chop onions.



Combine beans and onions in a large bowl.



Combine the remaining ingredient in a bowl. 



Mix until well blended. 



Pour over beans. 




Toss until well blended.

Chill several hours or overnight, stirring occasionally.
