Mmm…a hot cup of tea and a warm,
moist cinnamon-flavored muffin. What
better way to enrich a friendship?
Makes 12 muffins
Topping:
2 teaspoons sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
Muffins:
Muffins:
1¼ cups
whole wheat flour
1 cup
all-purpose flour
1½ teaspoons baking powder
1½ teaspoons
baking soda
2¼ teaspoons ground cinnamon
¼ teaspoon
ground nutmeg
2 egg
whites
1½ cups vanilla nonfat yogurt
¼
cup plus 2 tablespoons sugar
2 tablespoons
vegetable oil
2 teaspoons
vanilla extract
Gather your ingredients.
In a
small bowl or custard cup, combine topping ingredients.
Mix well and set aside.
In a large bowl, combine both
types of flour, baking powder, baking soda, cinnamon, and nutmeg.
Mix well.
In another bowl, combine
remaining ingredients.
Beat with a fork or wire whisk until blended.
Add to dry mixture, mixing until all ingredients are moistened.
Divide mixture evenly into prepared muffin cups. Sprinkle evenly with topping.
Bake 15 minutes, until a toothpick inserted in the center of a muffin comes out clean.
Remove muffins to a wire rack and
serve warm for best flavor.
