Cinnamon Yogurt Muffins

Mmm…a hot cup of tea and a warm, moist cinnamon-flavored muffin.  What better way to enrich a friendship?


Makes 12 muffins
Topping:
2      teaspoons sugar
¼     teaspoon ground cinnamon
     teaspoon ground nutmeg 

Muffins:
  cups whole wheat flour
1     cup all-purpose flour
  teaspoons baking powder
  teaspoons baking soda
 teaspoons ground cinnamon
¼    teaspoon ground nutmeg
2     egg whites
 cups vanilla nonfat yogurt
¼    cup plus 2 tablespoons sugar
2     tablespoons vegetable oil
2     teaspoons vanilla extract


Gather your ingredients.


Preheat oven to 400°.  Spray 12 muffin cups (or use muffin liners) with nonstick cooking spray.


In a small bowl or custard cup, combine topping ingredients.


Mix well and set aside.


In a large bowl, combine both types of flour, baking powder, baking soda, cinnamon, and nutmeg. 
     

Mix well.                     



In another bowl, combine remaining ingredients.  



Beat with a fork or wire whisk until blended.  


Add to dry mixture, mixing until all ingredients are moistened.  



Divide mixture evenly into prepared muffin cups.  Sprinkle evenly with topping.



Bake 15 minutes, until a toothpick inserted in the center of a muffin comes out clean.


Remove muffins to a wire rack and serve warm for best flavor.
