THREE DISHES
These bright and cheery fruit cups can
easily be varied by filling them with different fruits. Let your imagination and taste buds guide
you.
Makes 8 servings
4 small
oranges, cut in half crosswise
1
cup blueberries, fresh or
frozen (unsweetened)
1
cup canned crushed pineapple
(packed in juice), drained
2 teaspoon
confectioners' sugar
Carefully cut out orange pulp, using a
small, sharp knife. Leave the shells
intact. Remove and discard white membranes.
(For a fancy touch, you can scallop the edges of the orange halves with
a sharp knife.)
In a small bowl, combine orange
sections with blueberries and pineapple. Chill at least 1 hour. Cover orange shells and chill them
separately.
To serve, pile fruit mixture into
orange shells. (If necessary, slice a
very thin slice off the bottom of each orange half to keep it from tipping
over.)
Sprinkle with confectioners' sugar and
serve right away.
