Almond Oatmeal Bars

These quick, easy bars make a great dessert or a unique and nutritious breakfast-on-the-go. Imagine having your cereal, milk, and fruit all rolled into one delicious bar.


Makes 8 servings
1    cup rolled oats, uncooked (3 ounces)
   cup nonfat dry milk
½   teaspoon baking powder
½   teaspoon baking soda
½   teaspoon ground cinnamon
¼   teaspoon ground nutmeg
Dash ground allspice
¼   cup raisins
1    cup applesauce (unsweetened)
3    tablespoons sugar
1    teaspoon vanilla extract
¾   teaspoon almond extract

Gather ingredients and preheat oven to 350°.

Spray an 8-inch square baking pan with nonstick cooking spray.


In a large bowl, combine oats, dry milk, baking powder, baking soda, and spices. 



Mix well. 



Stir in raisins.


In a small bowl, combine remaining ingredients.



Mix well. 



Add to dry mixture, mixing until all ingredients are moistened. 



Spoon into prepared pan. Smooth the top with the back of a spoon.
Bake 30 minutes, until lightly browned.


Cool in pan on a wire rack. Cut into bars.
