Blueberry Cobbler

You can use fresh or frozen berries for this popular favorite. If using frozen, be sure to buy the unsweetened ones and thaw them before using.


Makes 4 servings
2       cups blueberries
3       tablespoons sugar
2       teaspoons cornstarch
½      cup all-purpose flour
¼      cup whole wheat flour
1       teaspoon baking powder
1       tablespoon plus 1 teaspoon margarine
      cup skim milk

Gather ingredients and Preheat oven to 375°.



Spray a 1-quart baking dish with nonstick cooking spray.



Place blueberries in a bowl. Add sugar and cornstarch and toss to coat berries. 




Place berries in prepared baking pan.




In a medium bowl, combine both types of flour and baking powder.  Mix well.  Add margarine.  Mix with a fork or pastry blender until mixture resembles coarse crumbs.  




Stir in milk.




Drop batter in 4 equal mounds onto blueberries. Bake 25 to 30 minutes, until lightly browned.





Serve warm for best flavor.
