Moist, tender, and filled with
fruit and spices, these muffins will grace your holiday table or please your
family all year long.
Makes 12 muffins
1¼ cups all-purpose flour
1 cup whole wheat flour
2 teaspoons baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon ground ginger
¼ cup plus 2 tablespoons raisins
2 egg whites
2 tablespoons canola oil
½ cup sugar
½ cup orange juice
1 teaspoon vanilla extract
1 cup canned pumpkin
2 small apples, unpeeled, coarsely
shredded (1 cup)
Gather ingredients and preheat
oven to 400°
Spray
12 muffin cups with nonstick cooking spray.
In a large bowl, combine both types
of flour, baking powder, baking soda, and spices.
Mix well.
Stir in raisins.
In
another bowl, combine egg whites, oil, sugar, orange juice, and vanilla.
Beat with a fork or wire whisk until blended.

Add pumpkin and apples and whisk until blended.
Add to
dry mixture, mixing until all ingredients are moistened.
Divide
mixture evenly into prepared muffin cups.
Bake
15 to 18 minutes, until a toothpick inserted in the center of a muffin comes
out clean.
Remove
muffins to a wire rack and serve warm for best flavor.
