This easy loaf is loaded with vegetables, making it colorful as well as tasty and nutritious. The flavor of the soy sauce blends well with the tomato sauce, giving the taste a nice little boost.
1 pound lean ground turkey
½ cup chopped carrot, in ¼ -inch pieces
½ cup finely chopped onion
½ cup chopped mushrooms
¼ cup finely chopped green pepper
½ cup salt-free (or regular) tomato sauce
2 tablespoons reduced-sodium soy sauce
¼ teaspoon garlic powder
Salt and pepper to taste

Gather your ingredients. Preheat oven to 350°.
Have a shallow baking pan ready.
In a large bowl, combine turkey with remaining ingredients.
Mix well.
Place loaf in prepared pan. Shape into a loaf.
Bake, uncovered, 1 hour.
