My thrifty 20 something is back again and this time she is making baked sweet potato chips. Don't they just look delicious? Since they are baked she is cutting fat calories and she can monitor how much oil and salt she adds to her chips.
I was craving a salty and sweet snack and wanted to make it on the cheap, so I decided to try to make Sweet Potato Chips that I had in a restaurant. I don't have a deep fryer (and really don't want one) so I decided to bake these crisps and share them with Milly. Take a look and let me know what you think!
1 Sweet potato peeled (make sure it is one of the longer potatoes)
1 Table spoon of olive oil
Salt and Pepper to taste
Gather your ingredients and preheat your oven to 400°
Mix olive oil, salt and pepper in a bowl.
Use a mandolin slicer or food processor to cut the potato thinly
Add slices to the olive oil mixture and coat the slices well.
Spread slices on to a baking tray and put in the oven bake for 10 minutes
Pat off excess oil and enjoy!

ReplyDeleteYes! It is very surprising. The 20-something did tell me that she actually may have used too much oil and next time she may use 1/2 a Tablespoon.

Yes, Marie! You can't get much close to nature than this. Besides eating the sweet potato raw, but I think cooked tastes much better.
