Irish Soda Bread

Just in time for St. Patrick's Day! This bumpy, crusty bread and its nice texture make it a perfect accompaniment to you St. Patrick's Day celebration.


Makes 16 servings

3        cups all-purpose flour
2        tablespoons sugar
1        tablespoon caraway seeds (optional)
1        teaspoon baking soda
1        teaspoon baking powder
1        teaspoon salt
½       cup raisins
1¼     cups plus 2 tablespoons skim milk
1        tablespoon vinegar
2        tablespoons plus 2 teaspoons canola oil



Gather your ingredients and preheat oven to 375°.


Spray an 8-inch cake pan with nonstick cooking spray.


In a large bowl, combine flour, sugar, caraway seeds, baking soda, baking powder, and salt.  Mix well.  


Stir in raisins.


In a small bowl, combine milk and vinegar. Let stand 3 to 5 minutes.

  
Stir in oil.


Add to flour mixture, mixing until all ingredients are moistened.  

 
Place dough in prepared pan and, with lightly floured hands, spread dough in pan.


Bake 30 minutes, until golden brown.


Transfer the bread to a wire rack, cover with a clean dish towel, and let cool.
