2 teaspoons canola oil
1 large green bell pepper, thinly sliced
1 large onion, thinly sliced
2 cups sliced mushrooms
Salt and pepper to taste
Heat oil in a large nonstick skillet over medium-high heat.
Cook, stirring frequently, until vegetables begin to brown, about 5 minutes.
Sprinkle with salt and pepper to taste and enjoy!
