Mushrooms, Onions, and Peppers

This delectable medley can be served as a side dish or used as a topping for baked chicken, fish, or omelets. It also makes a great addition to a sandwich. Enjoy the wonderful natural flavors the vegetables have to offer.

Makes 4 servings

2        teaspoons canola oil
1        large green bell pepper, thinly sliced
1        large onion, thinly sliced
2        cups sliced mushrooms
Salt and pepper to taste

Gather ingeridents.

Heat oil in a large nonstick skillet over medium-high heat.

Add vegetables.

Cook, stirring frequently, until vegetables begin to brown, about 5 minutes.

Sprinkle with salt and pepper to taste and enjoy!
