Beets a l'Orange

Serve these delicious beets hot as a side dish, then refrigerate the leftovers and enjoy them cold. Either way, they're sure to please the beet lovers in the family. 



Makes 8 servings

2     1-pound cans small whole beets, undrained
1      cup orange juice
2      tablespoons cornstarch
1      tablespoon lemon juice
2      teaspoons vinegar
1      teaspoon grated fresh orange peel
⅛     teaspoon ground nutmeg
Dash salt and pepper 



Gather Ingredients.

 
Drain beets, reserving ½ cup liquid.


Place liquid in a medium saucepan. Add remaining ingredients except beets.


 Stir to dissolve cornstarch. Bring mixture to a boil over medium heat, stirring constantly.


Continue to cook, stirring, 1 minute. Add beets. Heat through. 

 
Serve hot or cold.
