Legumes are also known as “beans”. They are the fruits or seeds from pod-bearing plants. They are low in fat and contain no cholesterol. And, in addition, they are very inexpensive.
1. To cook legumes, use 2 to 3 cups of water for each cup of beans.
2. One cup of dried beans will yield about 3 cups of cooked beans.
3. Legumes provide iron, B vitamins, zinc, calcium, potassium, magnesium, and phosphorus.
4. Legumes can be soaked in water overnight to reduce the cook time.
5. Canned beans can be used in recipes calling for cooked beans.
6. When cooking beans or peas, always prepare extra for the freezer.
7. Legumes contain high levels of complex carbohydrates and are a good source of dietary fiber.
