Cinco de Mayo Meal

Cinco de Mayo is this Sunday, which means fun fiestas! Just because this one of my favorite food holidays, doesn’t mean I can’t eat Lean & Lusciously. I have many recipes that will give you the Mexican fix you are looking for, without the guilt.



1.    Prairie Bean Tortillas: Similar to fajitas, but made with flour tortillas rather than corn tortillas, this is a quick, easy meal to prepare. 



2.    Black Bean Pineapple Salad: As cool as the Gulf of Mexico breezes, this refreshing bean salad can be served on a bed of lettuce or in a bowl with taco chips. It also makes a great salsa! 




3.    Mexi-Corn: The sprinkle of fresh Cilantro at the end of this really makes the dish! Its unusual flavor really enhances the flavors of Mexican food.


 

4.    Strawberry Ice-cream in a Flash: There's just a trace of fat in a frosty, cold dish of this easy, ice cream-type dessert. Just throw a few ingredients in the blender and enjoy. The perfect ending to your Cinco de Mayo Meal.

  1. These all look so yummy! I think I'll be trying those Prairie Bean Tortillas soon. My kids absolutely love Mexican foods - it's one dish I don't have to fight them to eat, lol.
