9 Ingredients. 1 Kid-friendly Dinner.

Sometimes it can be hard to cook something healthy that children will enjoy. Here is an easy and affordable way to create a kid-friendly dinner with just 9 ingredients!

Grocery List

1 pound boneless and skinless chicken breasts
1 bottle of reduced-calorie mayonnaise or light mayonnaise
1 box of Grape Nuts cereal
1 bottle of honey
4 medium sized baked potatoes
1 bag of non fat dry milk
1 small bag of sugar
1 small bottle of vanilla extract
1 bag of frozen strawberries

THREE DISHES

Honey Crunch Chicken

I found that "painting" the chicken with reduced-calorie mayonnaise seals in the moistness and the cereal on the outside adds a wonderful crunch.  You'll choose this one time and again.

                                                                                   Makes 4 servings

1       pound boneless, skinless chicken breasts
2      tablespoons plus 2 teaspoons reduced-calorie mayonnaise
ounces Grape Nuts cereal, crushed (⅓ cup)
1       tablespoon plus 1 teaspoon honey

Preheat oven to 375°.

Spray a 1-quart baking pan with nonstick cooking spray.

Rinse chicken and pat dry. Place in prepared pan. Using a pastry brush, spread mayonnaise over both sides of the chicken.

Sprinkle the cereal evenly over top side of chicken. Drizzle evenly with honey.

Let chicken stand at room temperature for 10 minutes.

Bake, uncovered, 45 minutes.
