Chicken in White Wine
White
wine and herbs give this easy dish a truly gourmet taste. The leftovers make a
great sandwich, either hot or cold.

1 pound
boneless, skinless chicken breasts
½ cup dry white wine
2 tablespoons
grated onion

Fried Rice

fine Chinese style, this delicious dish tastes just like the rice in your favorite
restaurant.
Makes 8 servings
4 tablespoons
reduced-sodium soy sauce
¼ teaspoon garlic powder
¼ teaspoon ground ginger
4 teaspoons
canola oil
1 cup
liquid egg substitute or 2 eggs
8 ounces
cooked chicken (2 cups), cut into small pieces* (I buy a rotisserie chicken which makes whipping up this dish so easy and fast!)
1 cup
thinly sliced green onion
4 cups
cooked white or brown rice (Uncle Ben's Rice in the bag only take 90 seconds to cook!)

Prairie Bean Tortillas
Similar
to fajitas, but made with flour tortillas rather than corn tortillas, this is a
quick, easy meal to prepare.
Makes
4 servings
4 6-inch
flour tortillas
1 teaspoon
canola oil
1 cup
chopped onion
2 cloves
garlic, minced
1 1-pound can pinto beans, rinsed and drained
(This will yield approximately 9 ounces of beans.)
1 8-ounce
can salt-free (or regular) tomato sauce
1 4-ounce
can chopped green chilies (hot or mild), drained
1 teaspoon
ground cumin
1 teaspoon
chili powder
1 teaspoon
dried oregano
1 cup
shredded lettuce

Creamy Potato Soup

soup is a real taste treat. It has a thick, creamy texture that tastes a lot

2 cups evaporated skim milk
1 pound cooked potatoes, peeled, diced (You can bake, boil, or microwave potatoes.)
2 tablespoons minced onion flakes
2 packets low-sodium instant chicken- or vegetable-flavored broth mix
¼ teaspoon celery salt
2 teaspoons margarine
Freshly ground black pepper to taste\
