Father’s Day Cookout



These recipes are perfect for a backyard BBQ anytime in the summer!  And with Father's Day is this Sunday, this menu will sure to please Dad too.




Best Cole Slaw: An old family standby for years, no backyard cookout is ever complete without it. Your guests will rave!  


Italian Mushroom Salad: As an appetizer, salad, or side dish, this easy, 3 ingredient, dish dresses any meal, and it's so easy to prepare and put together.


Basil Bean Salad: Spicy and delicious, the flavor of this salad is reminiscent of the popular Italian pasta with pesto sauce.


Springtime Broiled Fish: This easy, herbed fish is also great on a grill and makes a delicious dish for summertime entertaining.

1¼      pounds flounder, sole, or orange roughy fillets

2         tablespoons reduced-calorie margarine
1         tablespoon lemon juice
1         teaspoon dill weed
½        teaspoon onion powder
½        teaspoon grated fresh lemon peel
¼        teaspoon dried oregano
⅛        teaspoon salt
⅛        teaspoon pepper
           Dash paprika


Place fish in a shallow broiler pan.
 

Place margarine in a small saucepan and heat over low heat until almost melted. Remove from heat and stir in remaining ingredients.
 

Spread half of the mixture evenly over fish.
 

Place fish, margarine-side up, under a preheated broiler. Cook 3 to 5 minutes, then turn fish, spread with remaining margarine mixture, and broil 3 to 5 minutes more, or until fish flakes easily when tested with a fork.
