During this time of year it is hard to watch our calories and waist lines. No need to worry, I have 8 delicious recipes under 300 calories for you to enjoy. After all, it's easy to live a lean & luscious lifestyle.




Potato Latkes – 121 calories: Top these tender delicacies with applesauce, and you create a side dish or brunch dish that's really special. 


Chicken in White Wine – 125 calories:  White wine and herbs give this easy dish a truly gourmet taste. The leftovers make a great sandwich, either hot or cold.


Bean and Cheese Quesadillas – 160 calories: If you like, you can place some chopped tomato, green onion, or green chilies on top of the cheese before you fold the tortillas. Served with salsa, this makes a great appetizer or lunch dish.




Chili Meat Loaf – 187 calories:  Chili powder and garlic add a wonderful zip to this easy dish. Serve it with a baked potato topped with plain Greek yogurt or fat free sour cream and salsa, add a tossed salad, and dinner is complete. The leftovers make great sandwiches.

Cheesy Beans and Rice – 251 calories: Add a tossed salad and some steamed broccoli, and you have a filling, hearty family supper. It's a good idea to keep packets of cooked rice in the freezer. That way they're always ready to use in easy casseroles like this. Microwaveable cups of white or brown rice are also available in the rice section of your supermarket.
