Vanilla Tapioca Pudding

The wonderful texture of the tapioca adds a special old-time note to this popular dessert. 

Makes 4 servings

2     cups skim milk
2     tablespoons sugar
3     tablespoons quick-cooking tapioca
1     teaspoon vanilla extract

Gather ingredients.

Place milk and sugar in a small saucepan. Sprinkle tapioca over milk and let it stand to soften for 5 minutes.

Cook over medium heat, stirring constantly, until mixture comes to a boil.

Boil, stirring, 2 minutes.

Remove from heat and stir in vanilla.

Divide mixture into 4 custard cups.

Chill and enjoy.
